The Kai Tim Mälzer utility knife was designed by chef Tim Mälzer. The Kai Tim Mälzer knives are enhanced with KAI's famous damask layered metal structure, combined with a very strong core of VG10 steel. The core of the blade is enhanced with 32 layers of corrosion-resistant damask steel. The hardness of these blades is 61 ±1 HRC, which is exceptionally hard. As such this knife retains its sharpness for a very long time. The handle is made from brown walnut wood, feels very comfortable in hand and is great for both left and right-handed users.
